FOR THE CAKE

  • 3 cups all purpose flour gluten free, if needed * See notes
  • 2 cups sugar white, brown, or a combination of both
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon vanilla extract
  • 2 teaspoon vinegar white or apple cider
  • 1/2 cup + 2 tbsp oil any neutral flavored oil
  • 2 cups water

FOR THE COFFEE SYRUP

  • 3/4 cup black coffee brewed or instant
  • 2 tablespoon powdered sugar

To Make THE COFFEE FROSTING

  • 1 teaspoon coffee granules
  • 1 1/2 tablespoon unsweetened almond milk warm
  • 1/2 cup butter softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

TO DECORATE

  • 1/4 cup cocoa powder

Cake:

  • 2 cups good quality gluten-free all-purpose flour blend*
  • 1 tsp. xanthan gum *(see note)
  • 2 cups sugar
  • 1 tsp. baking soda

  • 1 cup salted butter (2 sticks or 16 Tbsp.)
  • ⅓ cup cocoa powder (I use part Hershey’s Dark Cocoa, and part regular cocoa)
  • 1 cup water
  • ½ c. buttermilk

  • 1 tsp. pure vanilla extract

Fudge Frosting:

  • ½ cup salted butter (1 stick)
  • ½ cup cocoa powder
  • 3 ⅔ cup powdered sugar
  • 7 Tbsp. milk
  • 1 tsp. pure vanilla extract

  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract

Ingredients

For the coconut custard:

  • 3/4 cup whole milk
  • 3/4 cup canned unsweetened coconut milk
  • 4 large egg yolks (save the whites for the cake)
  • 1/3 cup granulated sugar
  • 3 Tablespoons cornstarch
  • 2 teaspoons coconut rum, such as Malibu
  • 2 teaspoons vanilla extract

For the cake:

  • 2 cups Gluten Free All Purpose Flour Blend (recommended: Bob’s Red Mill 1-to-1 Gluten Free Baking Flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (one stick) unsalted butter, at room temperature
  • 1 3/4 cups sugar
  • 4 egg white at room temperature
  • 1 teaspoons vanilla
  • 2/3 cup milk
  • 2/3 cup plain Greek yogurt

To Make toasted coconut and coconut simple syrup:

  • 2 3/4 cups sweetened flaked coconut, divided
  • 1 1/2 cups water
  • 1 Tablespoon granulated sugar

For the coconut buttercream:

  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • 1/3 cup powdered sugar
  • 3/4 cup Coconut Custard, well chilled
  • pinch salt

For the coconut filling:

  • 3/4 cup Coconut Custard, well chilled
  • 3/4 cup heavy cream, well chilled

  • ¾ cup Dutch processed cocoa powder

  • 1½ cups unsweetened coconut (shredded or desiccated)
  • 1 cup chopped pecans

  • 340 g unsalted butter(at room temperature) (1 ½ cup)
  • 600 g confectioners sugar (5 cups)
  • 170 g crushed gluten free oreo cookies (1 ⅓ cup)
  • 60 ml lactose free heavy cream (¼ cup)
  • pinch of slat

For the Chocolate Ganache

  • 200 g quality dark chocolalate (1cup)
  • 100 ml lactose free heavy cream(heated) (½ cup)
