Ingredients

For the Chicken

  • Chicken Breast, cut into thin strips
  • Cornflour (for crispy coating)
  • Spring Onions (for added flavor and color)

For the Marinade

  • Dark Soy Sauce
  • Garlic and Ginger Paste
  • Sesame Oil
  • Sugar
  • White Pepper

To Make the Stir-Fry Sauce

  • Honey
  • Sriracha
  • Lemon Juice
  • Dark Soy Sauce

Instructions

  1. Prepare the Chicken:
    • Cut the chicken breast into thin strips.
    • In a large mixing bowl, combine the chicken strips with the marinade ingredients: dark soy sauce, garlic and ginger paste, sesame oil, sugar, and white pepper.
    • Leave to rest for at least 10 minutes to marinate.
  2. Coat and Fry the Chicken:
    • After marinating, coat the chicken pieces in cornflour.
    • Heat oil in a wok or frying pan to 180°C (356°F).
    • Fry the chicken pieces for 1 to 2 minutes, then remove them.
    • To achieve extra crispiness, fry the chicken again for 2 to 3 minutes.
  3. Prepare the Sauce:
    • In a clean pan, add a tablespoon of oil.
    • Fry the garlic and ginger paste for about 5 to 10 seconds.
    • Add the stir fry sauce ingredients: honey, lemon juice, dark soy sauce, and sriracha.
    • Stir continuously for 30 seconds or until the sauce has thickened.
  4. Combine Chicken and Sauce:
    • Once the sauce is ready, add the crispy chicken pieces to the pan.
    • Toss the chicken in the sauce to ensure each piece is evenly coated.

Serve the crispy chilli chicken with rice, noodles, or roasted tenderstem broccoli for a complete meal. Sprinkling sesame seeds on top before serving adds an extra layer of texture.
