Grilled Boneless Chicken Thighs Recipe

Ingredients
For the marinade
- 2 tablespoons paprika (see note 1)
- 4 garlic cloves, crushed
- 4 tablespoons flat-leaf parsley, fresh, finely chopped (see note 2)
- 1½ teaspoons salt
- ½ teaspoon ground black pepper
- ⅓ cup olive oil
Instructions
- In a mixing bowl (or a Ziploc bag), combine paprika, crushed garlic cloves, finely chopped parsley, salt, pepper, and olive oil. Give everything a good mix.
- Add the chicken thighs and coat each one of them with the mixture. Make sure they are all well coated before covering the bowl with cling film (or locking the Ziploc bag). Refrigerate them for at least 30 minutes before grilling.
- Grill on both sides until they are nicely brown and cooked through (see note 4).

- Although it may seem like the marinade isn’t enough, the amount specified is sufficient for 1.5 to 1.8 pounds (800 grams) of thighs and can be doubled or tripled as needed.
- Even though the preparation is quick, marinating the chicken overnight will intensify the flavors. However, a minimum of 30 minutes in the fridge is necessary if short on time.
- To keep the chicken thighs warm until serving, wrap them in aluminum foil.
