  • Unsalted butter
  • Olive oil
  • Rotini pasta
  • Cherry tomatoes
  • Red onion
  • Garlic cloves
  • Mushrooms
  • Tomato paste
  • Water
  • Salt
  • Black pepper
  • Italian seasoning
  • Mozzarella cheese
  • Green olives

Cheesy Vegetarian One-Pot Pasta 1

Instructions:

  1. In a large deep-sided skillet, over medium heat, melt the butter with olive oil.
  2. Add the red onion and cook for 2 to 3 minutes, stirring occasionally.
  3. Next, add the mushrooms and cook for 5 minutes, until softened and browned, stirring regularly.
  4. Add the tomatoes and cook for 1 to 2 minutes, then stir in the garlic.
  5. In a medium bowl, whisk together water and tomato paste until combined.
  6. Add the dry pasta into the skillet or stockpot with the vegetables.
  7. Pour the tomato mixture into the pot along with the salt, black pepper, and dried Italian herbs.
  8. Bring to a boil, then reduce the heat to low and cover. Cook for 10 minutes or until the pasta is cooked and the liquid has mostly evaporated.
  9. Stir in the Mozzarella cheese and green olives.
  10. Remove from heat and serve immediately.
