- 2 Eggs, (1 for the mixture, 1 lightly beaten for brushing over the rolls)
- 2 Green Onions / Shallots, halved lengthways and thinly sliced
- Salt + Pepper, to taste
- 2 sheets Frozen Puff Pastry, thawed

Corn & Black Bean Salsa
- INGREDIENTS
1/2 cup , diced
1/2 cup , diced
1/2 cup , diced
6 tablespoons , fresh, finely chopped
1 , juiced
1 can , 15 ounce, low sodium, rinsed
1 can sweet corn, 15 ounce, drained

Summer Tortellini Salad
Ingredients
- 20 oz cheese tortellini, fresh or frozen
- 1 cup halved grape tomatoes
- 1 red bell pepper, seeds removed and chopped
- 1 ear sweet corn, kernels removed (about 1 cup)
- 1 medium cucumber, chopped
- 3 green onions, sliced
- Basil vinaigrette
- Kosher salt and black pepper, to taste

Ingredients
- 250 g closed cup mushrooms
- 2 celery sticks
- 1 small onion
- 2 spring onions
- 2 garlic cloves
- 1 cup milk
- 1 tablespoon plain flour
- 25 g butter
- fine sea salt
- ground black pepper
- dill to taste
- 1 ready-rolled puff pastry
One-Bowl Raspberry Lemon Bread
Ingredients
- 1/2 cup salted butter, softened I prefer salted
- 1 cup granulated sugar
- 3 tbsp light brown sugar, packed
- 2 large eggs, at room temperature
- 1/2 tsp vanilla extract
- Zest of one large lemon
- 3 tbsp freshly squeezed lemon juice
- 1 and 1/2 cups all-purpose flour, spooned & leveled 195 grams
- 1 and 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sour cream, at room temperature greek yogurt works too
- 1/4 cup milk, at room temperature I used 2%
- 2 tbsp vegetable oil
- 1 and 1/2 cup raspberries I used fresh, but frozen will work too – just don’t thaw them

- 1 tbsp lemon juice
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract optional

Ingredients
- 1 loaf french bread cut into 16 slices
- 1 lb strawberries
- 6 oz blueberries
- 4 kiwis
- 3 peaches
Strawberry Schmear
- 1 8 oz package light cream cheese, softened
- 1 c. strawberries
- 3 Tbsp sugar
Mediterranean Couscous Salad
INGREDIENTS
