Tomato Basil Bisque Recipe

Ingredients:

  • Roma tomatoes
  • 1 head of garlic
  • Yellow onions
  • Fresh thyme
  • Italian seasoning
  • Canned diced tomatoes
  • Fresh basil leaves
  • Chicken or vegetable broth
  • Heavy cream
  • Olive oil
  • Salt and pepper

Instructions:

Roast the Garlic and Tomatoes:

  • Preheat the oven to 425 degrees F.
  • Prepare the garlic: Cut ¼ inch off the top of the head of garlic. Place on aluminum foil, drizzle with olive oil, then season with salt and pepper. Wrap the garlic tightly in foil and set aside.
  • Halve the tomatoes and place them cut side up on a large baking sheet. Season with salt and pepper. Arrange the tomatoes so they are not overcrowded.
  • Place the garlic (wrapped in foil) on the baking sheet with the tomatoes and roast for about 35 minutes.

Saute Onions and Aromatics:

  • In a large Dutch oven or pot, heat some olive oil over medium-high heat.
  • Sauté onions until softened (about 6-8 minutes).
  • Add the dried herbs and sauté for another 2 minutes until fragrant.

Add Roasted Ingredients and Simmer:

  • To the pot, add the roasted tomatoes, squeezed roasted garlic cloves, fresh basil, and canned diced tomatoes with their juices.
  • Pour in the broth, bring to a boil, then reduce to a simmer.
  • Allow to simmer for 20 to 25 minutes, uncovered, stirring occasionally until somewhat reduced.

Blend the Soup:

  • Blend the soup with an immersion blender until smooth. If using a regular blender, divide the soup into parts to blend and be cautious of hot liquids expanding in the blender.

Add Cream and Garnish:

  • Stir in heavy cream to taste.
  • To serve, drizzle additional heavy cream and olive oil over individual servings, if desired, and garnish with fresh basil leaves.

Make-Ahead and Freezing Instructions:

  • The soup lasts for about 3 days in the fridge.
  • Reheat in the microwave or on the stovetop, thinning with water or broth if needed.
  • If freezing, omit the heavy cream until reheating.

Substitutions and Variations:

  • Roma tomatoes can be substituted with large, ripe red tomatoes.
  • Fresh thyme can be swapped with half the amount of dried thyme.
  • You can use half-and-half instead of heavy cream, or milk for a thinner consistency.
