Layered Chocolate Cheesecake with Oreo Crust 1

Ingredients:

For the Oreo Crust:

  • 2 ½ cups of Oreo cookie crumbs
  • 6 tablespoons of unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz.) packages of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 teaspoons of vanilla extract
  • 2 cups of heavy cream
  • 10 ounces of bittersweet chocolate, chopped

To Make the Chocolate Topping:

  • ¾ cup of heavy cream
  • 6 oz. of bittersweet chocolate, finely chopped
  • 1 Tablespoon of granulated sugar

Instructions:

Creating the Oreo Crust:

  1. Blend Oreo crumbs with melted butter until moistened in a food processor.
  2. Firmly press the mixture into the bottom of a 9-inch springform pan, previously greased lightly on the edges with cooking spray.
  3. Freeze the crust while preparing the filling.

Preparing the Cheesecake Filling:

  1. Melt the bittersweet chocolate and let it cool.
  2. Combine the cream cheese and powdered sugar in a medium bowl until smooth.
  3. In a separate bowl, whip 2 cups of heavy cream to soft peaks, add vanilla extract, and continue whipping to stiff peaks.
  4. Gently fold the cream cheese mixture into the whipped cream on low speed.
  5. Split the mixture evenly into two bowls.
  6. Mix the cooled, melted chocolate into one half, then pour this over the crust. Carefully layer the second half of the mixture on top.
  7. Refrigerate the cheesecake for at least an hour.

Making the Chocolate Topping:

  1. In a medium saucepan, gently heat the cream, chocolate, and sugar on low, stirring until the chocolate is fully melted and the mixture is smooth.
  2. Once cooled, pour the topping over the set cheesecake.
  3. After the topping sets, run a thin knife around the sides of the cheesecake and remove the sides of the springform pan.

Serving:

  • Cut into slices with a sharp, thin, non-serrated knife. Optionally, drizzle with chocolate sauce before serving.
