Ingredients

For the Chocolate Cake:

  • All-purpose flour
  • Granulated sugar (can substitute with caster sugar)
  • Baking powder
  • Baking soda
  • Salt
  • Large eggs
  • Vegetable oil (or any other neutral tasting oil)
  • Buttermilk (If you don’t have buttermilk, you can make it with milk and vinegar or lemon juice)
  • Boiling water (to bloom the cocoa powder)
  • Cocoa powder (Dutch processed recommended, but natural unsweetened can also be used)
  • Instant coffee

  • Light brown sugar
  • Cocoa powder (Dutch processed or natural)
  • Boiling water

Instructions

Prepare the Cake Batter:

  • Preheat your oven to 350°F (conventional) and lightly grease a 7×11″ baking dish with butter.
  • In a clean bowl, sift and combine all dry ingredients (excluding cocoa powder) using a whisk.
  • To these dry ingredients, add eggs, oil, and buttermilk. Whisk gently until combined. Be careful not to overmix; if lumps form, gently whisk them away.
  • Separately, whisk boiling water with the cocoa powder and instant coffee to create a shiny, chocolatey mixture (“blooming” the cocoa powder).
  • Fold this cocoa mixture into the rest of the batter until combined.
  • Pour the batter into the prepared baking dish.

Adding the Hot Fudge Pudding Layer:

  • Mix granulated sugar, light brown sugar, and cocoa powder in a bowl, ensuring there are no lumps.
  • Evenly sprinkle this sugar-cocoa mixture over the cake batter in the baking dish.
  • Gently pour boiling water over the contents of the baking pan, using the back of a spoon to ensure even distribution and prevent splashing.

Bake the Cake:

  • Bake in the preheated oven for approximately 30 minutes. The cake should feel firm on the top, but a toothpick inserted into the center should come out with fudge indicating it is molten like lava inside.
  • Aim to slightly underbake to retain the molten quality.

Serve:
