Ingredients

To Make the Pita Pizza Crust:
- 4 pita rounds
- 3 tbsp olive oil
- 1/4 to 1/2 tsp kosher salt
- 1/2 tsp dried oregano
For the Greek Pita Pizza Toppings:
- 1/2 pint grape tomatoes, sliced in half
- 1/2 English cucumber, sliced thinly (about 20 thin slices)
- 1/2 cup diced green peppers
- 1/2 cup sliced red onion
- 8 Kalamata olives, halved
- 1/2 cup crumbled Feta cheese
- 1 cup Mozzarella cheese, shredded
Instructions
Marinated Greek Chicken:
- Place the chicken breast fillets in a zip-top baggie. Combine with olive oil, lemon juice, minced garlic, dried oregano, kosher salt, and black pepper. Seal and mix well. Allow to marinate in the fridge for at least 15 minutes, up to 8 hours.
- When ready to cook, heat a cast iron skillet over medium-high heat. Sear the chicken for about 5 minutes per side, adding a tablespoon of butter for basting. Chicken is done when it reaches an internal temperature of 165°F. Let it rest before shredding for the pizza topping.
Tzatziki Sauce:
- Mix the Greek yogurt, grated cucumber, minced garlic, olive oil, fresh dill, lemon juice, kosher salt, and black pepper. Blend for a smoother texture if desired. Adjust seasoning to taste.
