  • Herbs: Thyme and parsley are recommended, but rosemary, oregano, tarragon, chives, or cilantro can be substituted based on your preference.
  • Cream: You can use half and half, heavy cream, light cream, or thickened cream. Heavy cream adds more richness.
  • Flour: Needed to achieve the creamy texture. As an alternative, use cornstarch; mix 2-3 tablespoons with 1/4 cup water to create a slurry.
  • Garlic: Fresh garlic is best, but minced can be used if necessary.
  • Onions: Two onions (or 1/2 cup) recommended for a balance of flavor with the mushrooms.
  • Stock/Broth: Chicken or beef stock works well. For a vegetarian soup, use a quality vegetable stock.

Cooking Instructions:

  1. Clean and slice the mushrooms.
  2. In a large pot, sauté onions and garlic until tender.
  3. Add mushrooms and herbs, cooking until mushrooms are soft.
  4. Stir in flour or cornstarch slurry to thicken the mixture.
  5. Gradually add cream and stock, stirring continuously to create a smooth texture.
  6. If using, and simmer the soup for a few minutes to combine flavors.
  7. Season with salt and pepper to taste, and serve hot.
