- 2 cups (225 g) raspberries, fresh or frozen
- 4 medium egg whites, room temperature
- 4 tbsp (60 g) yogurt or sour cream
- 1/2 cup (120 mL) milk, room temperature
- 1 tsp vanilla paste (or 2 tsp vanilla extract)
- 2 cups + 3 tbsp (265 g) plain gluten free flour blend
- 1/2 tsp xanthan gum
- 2 tsp baking powder
- 1 1/2 tsp beetroot powder (optional for a more intense pink colour)
- 1 1/4 cup (250 g) granulated sugar
- 1/2 tsp salt
- 2 sticks (226 g) unsalted butter, softened
For chocolate buttercream frosting:
- 3 sticks (340 g) softened unsalted butter
- 2 cups (240 g) powdered/icing sugar
- 1/2 cup (60 g) cocoa powder
- 1/4 tsp salt
- 5 1/4 oz (150 g) dark chocolate, melted and cooled until warm/room temperature
For assembling and decorating the cupcakes:
- ~3 – 4 tbsp raspberry jam
- freeze-dried raspberries
- heart-shaped cookies or other decorations of choice
Strawberry Cupcakes
INGREDIENTS
- 1/2 c. unsalted butter – room temperature
- 1 c. granulated sugar
- 3 egg whites
- 2 tsp. vanilla extract
- 1 3/4 c. cake flour
- 2/3 c. sliced freeze dried strawberries – pureed into powder
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. kosher sea salt
- 2/3 c. full-fat sour cream – or whole milk Greek yogurt
- 1/2 c. whole milk
- 2/3 c. diced strawberries – about 1/8-inch in size
FOR THE FROSTING:
- 1 c. unsalted butter – room temperature
- 1 c. freeze dried strawberries – pureed into powder
- 3 1/2 c. powdered sugar
- 3 tbsp. cooked strawberry puree* – see notes
- 2 oz. white chocolate – melted and at room temperature
- 1/4 cup whole milk – at room temperature
- 1/2 tsp. vanilla extract

- 2 eggs, room temp is best
- 1/3 cup Truvia Baking Blend {or 3/4 cup sugar}
- 1 1/2 teaspoons vanilla

- 1/2 cup buttermilk {splash of vinegar in a measuring cup, fill with milk and let set for a couple minutes}

Ingredients
- 1 box chocolate or devils food cake mix
- 1 cup buttermilk – instead of water – add 1 tablespoon of vinegar to 1 cup measuring cup, add milk and let set 2-3 minutes
- 1/3 cup oil – canola or vegetable
- 4 large eggs, room temperature
Frosting
- 1 cup (2 sticks) unsalted butter, softened
- 6-8 cups powdered sugar
