Ingredients:

  • Poblano peppers
  • Vegetable oil
  • Ground beef
  • Garlic
  • Taco seasoning
  • Cooked white rice
  • Black beans

  • Monterey Jack cheese
  • Cilantro

Instructions:

  • Prep the Poblano Peppers: Remove the tops off the peppers, and take out the ribs and seeds. A serrated grapefruit spoon or a small paring knife works well for this.
  • Preheat and Bake Peppers: Preheat the oven and coat a baking sheet with cooking spray. Place the peppers on the pan and bake until they start to soften.
  • Cook the Ground Beef: While the peppers are baking, brown the ground beef in a pan or large skillet over medium heat. Add the garlic and taco seasoning.
  • Combine Filling: Add the cooked rice, black beans, corn, tomatoes, and part of the Monterey Jack cheese to the beef mixture. Stir to combine.
  • Fill the Peppers: Divide the filling evenly among the peppers. Place them on the prepared baking sheet.
  • Bake with Cheese: Sprinkle the remaining cheese over the stuffed peppers. Bake until the cheese is melted and bubbly.
  • Garnish and Serve: Once done, garnish the peppers with fresh cilantro and serve warm.

  • Choose large, firm poblano peppers without any wrinkled spots and with fresh-looking stems.
  • You can assemble the peppers up to 8 hours before you plan to bake them, but you might need to extend the baking time by 5-10 minutes if you start with cold peppers.
  • It’s best to use freshly grated cheese, as pre-shredded cheese contains anti-caking additives and doesn’t melt as well.
