Ingredients:
- 250g dark chocolate (70% cocoa)
- 100g unsalted butter
- 100ml milk
- 200g Amaretti cookies (crunchy ones, not soft)
- 2 tbsp unsweetened cacao powder
- 100g hazelnuts, roughly chopped
- 100g pistachios, shelled and roughly chopped
- Powdered sugar for dusting
Instructions For Chocolate Salami
- Break the dark chocolate into small pieces.
- Add the chocolate and butter to a bowl set over simmering water (make sure the water doesn’t touch the bowl). Stir until melted and smooth.
- Remove from the heat and add the milk a little at a time. Stir until combined after each addition (it can look split at first but keep going, it will come together).
- Add the cacao powder and a pinch of salt, stir until there are no lumps.
- Crush the Amaretti cookies (use a Ziploc bag and rolling pin) to small-medium chunky pieces.
- Add the cookies, hazelnuts, and pistachios to the chocolate mixture and fold together until everything is coated with chocolate.
- Pour the mixture on a large piece of baking parchment paper and shape it into a rough log shape.
- Roll the chocolate into the parchment paper tightly and twist both ends like a candy wrapper. For an extra firm and round shape, wrap again in plastic wrap.
- Place in the fridge to set for 4-6 hours or overnight.
- Once firm, unwrap and roll in powdered sugar.
- For optional realism, tie with a string. Tie a piece of string to one end then loop around the length of the salami tying knots on each loop to secure and chop off the excess string at both ends.
Storage:
The Chocolate Salami can be stored in the fridge for up to 1 week or in the freezer for up to 3 months.
