- Sugar
Instructions
1. Prepare Chicken
- Flatten the chicken to be 3/4 inch thick for even cooking.
2. Make Marinade and Marinate Chicken
- Combine soy sauce, mirin, and sugar in a bowl.
- Reserve half of the mixture for later use.
- Marinate the chicken with the remaining half of the mixture for 15 minutes in the fridge.
3. Cooking Method Options
Grill or Pan:
- Heat a grill or pan over medium-high heat.
- Place the chicken skin-side down (if using skin-on).
- Flip and cook the other side until the internal temperature registers 165 degrees F (74 degrees C).

Bake:
