Taco Casserole Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1/2 medium onion, chopped
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 2 cups crushed Doritos (Nacho Cheese flavor recommended)
- 1 (14 ounce) can black beans, drained & rinsed
- 1 (12 ounces) can of corn, drained
- 1 (15.5 ounces) jar salsa (use your preferred kind)
- 2 cups shredded Mexican cheese blend (or use cheddar), divided
- Optional toppings (to taste): tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce, etc.
Instructions:
- Preheat the oven to 350°F (175°C), adjusting the rack to the middle position.
- Heat the olive oil in a skillet over medium-high and add the ground beef. Cook for 5 minutes, breaking the meat up as it browns.
- Stir in the onion, chili powder, garlic powder, and ground cumin. Continue to cook for an additional 5 minutes.
- Place crushed Doritos in an even layer at the bottom of a 9×13-inch casserole dish.
- If there is excess fat in the skillet, spoon most of it out. Then stir in the black beans, corn, salsa, and half the cheese into the skillet. Warm the mixture until the cheese has melted.
- Spoon the beef and bean mixture evenly over the Doritos in the casserole dish.
- Sprinkle the remaining cheese on top of the casserole.
- Bake, uncovered, for 15-20 minutes or until the cheese is adequately melted and the casserole is warm throughout.
- While the casserole bakes, prepare any desired toppings.
- Serve the casserole as is or garnished with your selection of toppings.
Notes:
- The recipe yields 6-8 servings, depending on portion sizes.
- Optional toppings can be added to individual servings according to personal preference.
